Okay, I really hate to admit it and my husband says I shouldn’t, but for the first time I’m going to say that I was a little disappointed with a cookie recipe once it was baked and cooled. I was excited about the idea of a “pineapple cookie”, so I thought Pineapple Refrigerator Cookies would be the “bomb”!

When reading the recipe, I had expectations of a sweet pineapple flavored cookie with a nice texture that accents the pineapple. Unfortunately, I didn’t get what I was expecting…but I did get a great tasting cookie! I would expect no less from Cookies by Bess ?

As I read the recipe and was thinking about adding the pineapple, I got a little worried about what the amount of liquid in the pineapple would do to the cookie dough and how it might affect the cookies while baking, but I was ready to jump in and see what happens.

To begin with, the recipe was true as written. No adjustments needed to the ingredients, but I did need to adjust the baking time and used some additional flour when shaping the rolls. I also want to mention that I ended up making 4 rolls about 1 ½ inch thick versus the 2 rolls mentioned in the recipe. It would have been too difficult to handle and shape the dough into long rolls. Smaller rolls were much easier to control and form and store in the refrigerator.

I’m rating this recipe 2-stars for cookie difficulty. Shaping the rolls and slicing the cookies are two steps that add to the time and effort needed to bake these cookies.

First, I just have to mention, this cookie dough is amazing! It’s a beautiful blond color and the texture of the pineapple in the dough makes it shine! I couldn’t help tasting it once, or twice ?. It was hard to resist! It totally tasted as yummy as it looked!

Shaping the dough into the rolls went quick. I used flour on my hands and the dough to make it easier to handle and shape. Just use what you need to ensure the dough doesn’t stick to your hands while rolling. As mentioned above, I opted to make the rolls a little smaller in diameter than the recipe calls for.  This made handling the dough easier, and resulted in a smaller cookie.

Once rolled and wrapped in wax paper, I put the rolls in the refrigerator to firm up overnight.

The next day when I pulled the rolls out started to slice the cookies, I was surprised they hadn’t firmed up as much as I expected. The softer rolls, along with the pineapple in the dough, made slicing the cookies and keeping the round shape of the challenging. By the time I was done slicing one roll, the dough was soft and somewhat hard to handle. Good thing I made shorter and thinner rolls!

Make sure your cookie sheets are well greased as the cookies tended to stick after baking. The cookies did spread and expand a little while baking.

The recipe calls for baking for about 15 minutes or until light brown which I thought seemed like a long time for a 1/8-inch cookie…and it was. I ended up baking the cookies for 10 minutes. This was long enough to bake the cookie through and give it a nice golden-brown color!

I let the cookies to cool on the cookies sheet for several minutes before removing them to a cooling rack.

It’s important to grease your cookie sheet well because these cookies wanted to stick. Whether I took them off the sheet right out of the oven or after waiting a few minutes, I had to be careful not to break the cookies as I moved them to the cooking rack.

So now that the cookies are cooled, they are ready to eat! I was so excited to taste the pineapple!
Unfortunately, there was really wasn’t much pineapple flavor. They tasted great, and you can see the texture of the pineapple, but no real pineapple flavor. As I kept trying them, I realized they tasted a lot like Nilla Wafers! I think I laughed out loud ?

So, if you are looking for a pineappley flavored cookies, I’m afraid these Pineapple Refrigerator Cookies aren’t it…but if you’re looking for a homemade Nilla Wafer tasting cookie, this is the cookie for you!

Pineapple Refrigerator Cookies are a typical refrigerator cookie…they are easy to make and store. You can be flexible and make all the cookies at once or a “roll” at a time. These cookies are not too sweet and have a nice subtle vanillay flavor…super easy to pop 5 or 6 in your mouth without anyone knowing. Whose counting, right! ?

This cookie is a great candidate for a vanilla frosting if you want to dress it up and add a little sweetness. Or just serve it as is for a subtle, nillay flavor!

Pineapple Refrigerator Cookies

Ingredients

2/3 cup butter
1 cup brown sugar
½ cup crushed pineapple, drained
2 eggs
1 tsp vanilla
1 tsp baking soda
3 cups flour
½ tsp salt

Instructions

Cream butter and sugar well. Add eggs one at a time and mix well. Stir in well drained pineapple and vanilla. Added sifted dry ingredients. Mix well. Shape into two rolls 2 inches in diameter. Wrap in wax paper and refrigerate for several hours. Slice 1/8 inch thick. Bake on greased cookie sheets in 375-degree oven for 15 minutes or until lightly browned.
