Pecan Kisses

Pecan Kisses - Feature

When I was a little girl, one of my favorite cookies (not from Cookies by Bess) were Pecan Sandies from Keebler, the uncommonly good cookies made by little elves that live in a tree. It was such a treat when my Mom would buy them. I had no idea that my Grandma’s Pecan Kisses recipe was the same cookie!

Now Keebler calls their cookies Sandies, and they have several different flavors. Grandma Bess’ Pecan Kisses haven’t changed one bit! I don’t remember ever trying this Pecan Kisses recipe when I was a kid.  But man!  Trying them now really brought back memories of my childhood and eating Pecan Sandies!

I am rating this recipe 1-star for difficulty, as mixing the five ingredients together, then forming the dough into balls was super easy!

It didn’t take long to pull my ingredients together and get started. Check out the one ingredient that stands out…RUM! Yeah!  Who knew Pecan Kisses (Sandies) had rum in them?  Maybe that’s why I like them so much 🙂

I made sure my butter was very soft per the recipe. It made a big different as I started mixing everything together. With only 2 teaspoons of rum for liquid, I was wondering how the dough was going to come together. As I was adding the rum, I realized the recipe calls for 2 teaspoons not 2 tablespoons!  I was just about to put in a second tablespoons of rum in by mistake!  Good thing I caught myself.  I still ended up with 1 extra teaspoon of rum, oh well 🙂

As I tried mixing the ingredients together by hand but stopped after a few minutes when I realized it wasn’t coming together. I decided to use my KitchenAid to help. It worked perfectly! The dough came together after only a few minutes.

Of course, I had to try the dough, OMG!  So many pecans!  This dough is soooo gooood!

The cookies bake in a slow oven, at 300 degrees for 25 minutes. I baked just a couple cookies for my test batch to make sure the dough consistency was right. It is a little dry, so I wasn’t worried it would spread out…more I was worried it wouldn’t spread at all!

I checked the cookies every 5 minutes. After about 10 – 15 minutes, they started to spread a little. They finally spread nicely to a disk shape. To be honest, they were just perfect! They spread enough to form a cookie, but not too much to flatten out. Just a perfect cookie!

I lightly greased my cookie sheets and because the cookies didn’t spread too much, I was able to fill the cookies sheets up! I ended up with 25 cookies on each sheet. In the end, I baked just over three cookie sheets full. This gave me just over 6 dozen cookies, just like the recipe says.

I sprinkled a little powdered sugar on a few cookies when they were cooled per the recipe. In my opinion, doing this didn’t add anything. I like the cookies just as they are right out of the oven.

When I tried the finished product, I couldn’t believe how much they tasted like the old Pecan Sandies I had as a kid. It was such a nice surprise and what a wonderful treat!

Cookies by Bess also has a “Sandies” recipe. I’ll have to try these next!

I hope you try these “blast from the past” cookies!

XXOO,

Janet
