Wow! What a great recipe! These Fresh Apple Cookies are super easy to make and full of great ingredients like apples, raisins, nuts, and all the wonderful fall spices like cinnamon, nutmeg, and cloves! A perfect cookie for celebrating the Fall season!

I haven’t made these before, so I was very careful to follow the instructions and measure all ingredients accurately. Even with doing this, I found there were some adjustments I needed to make.

I’m rating the Fresh Apple Cookie recipe 2-stars for cookie difficulty for all the ingredients and the added frosting steps.

I’ve been using my Kitchen Aid mixer for all my cookie recipes over the past several months, just to help with all the strong-arm mixing needed to get the butter the right consistency. In the past, I’ve always mixed my batters by hand, so I wonder how much of a difference, if any, this makes.  Once I gathered all the ingredients together, I got started.

Working with apples, raisins, and nuts really makes me think of the Fall season and all the warm and comfortable foods at this time of year.  These cookies are perfect for packing a picnic or a snack for the kids (big and small!).

I had to take a picture of these ingredients together…funny, after taking this picture, cut up extra so I could eat it for a snack!

After mixing all ingredients as written in the recipe, I have a batter that is pretty loose.  Since this was the first time I made these cookies I tried a test batch to see how they bake up before adjusting the recipe. I spooned about a teaspoon of batter on my greased pan and baked for 12 minutes at a 400 degree oven. The result was a flat, hard and over-baked cookie ☹.

To remedy this issue, I decided to add additional flour to the recipe. I started with about a ¼ cup flour and kept adding from there until I got the consistency I thought would work best. In the end, I over added a bit, so I’d suggest starting with the ¼ cup if needed and then adding tablespoons full of flour, not going over ¾ cup. I also suggest adding additional cinnamon, nutmeg and cloves ensure the flour doesn’t diminish all the spicy flavors of the cookie.

I baked the next batch and they turned out great! They got a little puffy and remained soft and a bit chewy which is what I expected from this cookie.

After baking the entire batch, I realized the cookies look like a typical drop cookie. I immediately thought these Fresh Apple Cookies would look  and taste great with frosting! This is a hearty cookie, so it needs an equally hearty frosting..one that will complement the great flavors of the spices, nuts, and fruit.

I decided on Bess’ Fabulous Frosting…what a great name! This was a new frosting recipe for me, but after looking at the ingredients, I thought would be a great match with these Fresh Apple Cookies!

This is the first frosting recipe I’ve made that calls for just sugar versus confectioner’s sugar.  I guess it could have meant confectioner’s sugar, but I decided to use granulated sugar because any other recipe I’ve read or made specifies confectioner’s sugar.  This is also the first frosting recipe I’ve made that calls for flour!  I followed the frosting recipe instructions and ended up having to add additional flour to get the consistency because the recipe as written was too loose for frosting. It seemed like a full cup of milk was a lot of liquid and it was!  The frosting was way too loose.  I added a tablespoon of additional flour until I had the consistency I wanted, in the end about 7 Tbs.

After mixing the ingredients together, I noticed the texture of the frosting was a little different, probably due to the granulated sugar, but the taste/flavor was great!  Once I finally got it to the right consistency, it worked perfectly. With adding the additional flour, the recipe makes a good amount of frosting, which was great because it allowed me to generously frost the cookies.

Another great option for this recipe would be to use a cream cheese frosting…but it would have to be a little lighter on the cream cheese flavor so it doesn’t take over all the yummy, spicey flavors already in this cookie!

It was necessary to let the frosting firm up a bit before storing the cookies in a cookie tin or jar. I would suggest serving these cookies right away or freezing then right away. The frosting set up nicely after freezing and stayed moist but not “wet”, so they were easier to serve and eat!

Fresh Apple Cookies are a great way to celebrate the Fall season…they are an easy cookie to make and will be a crowd pleaser for picnics, bbq’s, or just everyday with your kids. Adults will like them too because of all the good ingredients…you could say they are even good for you because they have just about all the food groups ?

Fresh Apple Cookies

Ingredients

2 cups sifted flour
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
1 tsp cloves
½ tsp nutmeg
½ cup butter
¼ cup milk
1 1/3 cups light brown sugar, packed
1 egg, beaten
1 cup chopped nuts
1 cup chopped raisins
1 cup finely chopped apples, unpared

Instructions

Sift together flour, salt, soda, and spices and set aside. Cream together sugar and butter. Add egg and mix well. Stir in half of the dry ingredients. Add nuts, raisins, and apples. Mix in milk and rest of dry ingredients. Drop by spoonfuls on greased cookie sheets and bake at 400 degrees for 12 to 14 minutes. Cookies should be placed 2 inches apart. Frost if desired.

Notes

Fabulous Frosting

5 Tbs flour
1 cup milk
Cook together over slow flame. Stir constantly. Cool.
Cream together well:
1 cup sugar
1 cup butter
1 cup sugar

Add to flour and milk mixture. Cream until light and fluffy.

If a colored icing is wanted, add a few drops of food coloring. Beat before adding too much coloring in order to obtain the right color.
