My father-in-law was visiting and as we were chatting one day, I asked what his favorite ice cream is. He immediately said chocolate. No questions asked…he likes chocolate best! So, when I was deciding what cookies to make while he was here, I decided to make something chocolate. I came across the Chocolate Bar Yummies recipe in Cookies by Bess and stopped right there.  How can resist a cookie named Chocolate Bar Yummies?

As I read the recipe, they sounded awesome and easy to make! My time is more limited these days, since I started working full time again, so easy to make is the way I’m playing it for now.

I’m rating this recipe 1-star for difficulty because they really are easy to make! There are a good amount of ingredients, but the directions are easy to follow, and I was able to whip these guys together in no time! With the 12-minute baking time, I was about done with the whole batch in just over an hour!

I gathered all my ingredients together and got started.

I started by combining the butter, brown sugar, and chocolate in a sauce pan to heat on the stove. The recipe doesn’t call for a specific type of chocolate.  I had semi-sweet Baker’s Chocolate in my pantry, so that’s what I used.  But I think sweet/milk chocolate or even dark chocolate would work great with this recipe.  Just depends on your preference, or as in my case,  what’s in your pantry 🙂

It took only a couple minutes for everything to heat up and melt together. I let the mixture cool to almost room temperature for before adding the egg to make sure the mixture didn’t turn in to chocolate scrambled eggs! ?

I transferred the chocolate mixture into a mixing bowl and pulled together my sifted dry ingredients, milk and vanilla. The recipe says to alternate the dry ingredients and milk/vanilla.

This worked really well and turned the chocolate mixture into a super creamy almost cake like batter. A perfect texture for spreading into the greased jelly roll pan.

I used the size pan mentioned in the recipe instructions. The amount of batter fit perfectly! I used a non-stick pan with a light coating of margarine. The mixture spread easily!

Finally, I sprinkled the chopped nuts and coconut on top of the cookie mixture. The recipe doesn’t call for a specific type of nut.  I decided to use walnuts, only because they seemed the right fit with this recipe. Although, pecans will work just as well and will probably add a bit more richness to the final cookies. Just depends on our taste.  I mixed the chopped nuts and coconut together to help make sure they were evenly spread on the cookie batter.

Okay! Just like that, we are ready to bake! Super easy to whip up the cookie batter and super easy to spread the nuts and coconut.  I love that this cookie only bakes for 12 minutes…just enough time to clean up my work space and make room for the finished cookies!

Such a pretty bar cookie! I love the look of the coconut and nuts along with the chocolate cookie! I let the pan cool slightly as noted in the recipe and then started cutting. The cookie crust was super soft and moist, just like a cake or cake brownie! I’ve never made a cookie like this before. I’ve had soft cookies before for sure, but never a cake-like cookie like this one.

I cut the cookies and then let them cool completely before removing them from the pan. It seems like the cookies in the center of the pan needed just a bit more time to bake to set up because they still seemed a little gooey.  But in the end, after they were all cooled, I had super moist, super chocolately and nutty cookies. The texture of the nuts and coconut add nicely to the chocolate cake/cookie.

If you like a moist cookie that is full of chocolate flavor, you are going to LOVE these Chocolate Bar Yummy cookies! They are absolutely decadent!  I think they are perfect when paired with vanilla ice cream. You could even dip them in whipped cream. Any way you eat them, I promised you won’t be disappointed! They certainly fit their name as Chocolate Bar Yummies!

Chocolate Bar Yummies

Ingredients

½ cup butter
2 squares chocolate
1 cup brown sugar
1 egg beaten
1 ½ cups sifted flour
1/8 tsp salt
½ tsp soda
½ cup milk
1 tsp vanilla
½ cup chopped nuts
½ cup coconut, if desired

Instructions

Melt sugar, butter, and chocolate, stirring until smooth. Cool. Add egg and mix well. Add sifted dry ingredients alternately with milk and vanilla. Mix well. Pour into a shallow greased pan. Size about 10 ½ x 15 ½ inches. Sprinkle with chopped nuts and coconut. Bake at 350 degrees for about 12 minutes. Cool slightly and cut into bars.
