Fudge Bars No. 2
I’m beginning to think Grandma Bess had an addiction to chocolate! There are so many wonderful chocolate cookie recipes in Cookies by Bess, I almost can’t stand it! Coming from someone that really doesn’t love chocolate…I have to admit that every Cookies by Bess chocolate cookie recipe I bake is better than the one before…Fudge Bars No. 2 is no exception!
Fudge Bars No. 2 are perfectly titled! The dough looks like fudge, the cookies look and taste like fudge and if you haven’t had enough chocolate fudge to this point, the chocolate fudge frosting on top is the perfect “cherry on top” 😊
As with most other bar cookie recipes, I’m rating Fudge Bars No. 2 – 2-stars for cookie baking difficulty. There are a couple additional steps in this recipe (melting the chocolate and spreading the cookie dough in the jelly roll pan) but nothing difficult.
To get started, I gathered all my ingredients together.
The recipe mentions adding cooled melted chocolate to the creamed butter and sugar, so I got started heating the chocolate over low heat on my stove. After just a few minutes, the chocolate was all melted.
Next, I mixed together the butter and sugar and then added the melted chocolate and vanilla…
And mixed it all together.
I added the flour a bit at a time mixing continuously.
The dough seemed a bit dry once all the flour was mixed together.
I realized the dough was dry for a reason…the recipe says to spread the dough on a greased jelly roll pan. This cookie dough seemed the perfect consistency for spreading!
Spreading by hand or palm that is! I didn’t need to flour my hands as mentioned in the recipe…
My 10 x 15 inch jelly roll pan worked perfectly for the amount of dough.
Next, I spread the egg whites on top and I was ready to bake!
I decided not to sprinkle the nuts on top prior to baking. Instead, I planned to frost the fudge bars and then sprinkle the nuts on top.
The dough didn’t raise while baking, it actually looked pretty much the same before and after baking.
While the fudge bars were cooling, I made the frosting. I used the Fudge Bars No. 1 frosting recipe. I’ve used this recipe several times since I made Fudge Bars No. 1, I think it’s the best chocolate/fudge frosting I’ve ever had!
Having made this frosting before, I new it made a ton of frosting, so this time, I decided to cut the recipe in half. I ended up with the perfect amount!
The frosting recipe mixes together nicely and so I was ready to frost in no time!
The frosting not only tastes fudgy and great, it spreads easily…I just plopped the frosting on top of the cooled fudge bars and got out my spatula.
So smooth and creamy!
I’m glad I decided to frost these Fudge Bars No. 2! The thin layer of fudge frosting looked awesome!
The bars were perfect for cutting! Don’t they just look awesome!
Finally, I sprinkled chopped walnuts on top. Rather than finely chop the nuts, I decided to and break the walnuts into larger pieces. I think they look great on top!
If you are looking for a cookie that actually looks and tastes like fudge, Fudge Bars No. 2 are it! These cookies are packed with fudge, chocolate and the fudgy frosting adds the perfect smooth and creamy topping.
You can’t go wrong with these cookies, they are simply fudgmazing! 🙂
Fudge Bars No. 2
1 cup shortening
1 cup brown sugar
1 egg separated
1 ½ tsp vanilla
2 cups flour
½ cup chopped nuts
1 ½ sq. melted chocolate
Cream butter and sugar until light and fluffy. Add egg yolk, add cooled chocolate and vanilla. Mix well. Add flour. Mix well. Spread on greased jelly role pan. Flour hands to prevent sticking. Brush with egg white and sprinkle with nuts. Bake at 300 degrees for 25 to 30 minutes. Cut when cool. Cann also omit nuts and frost. Nuts can be added after frosting.
Fudge Frosting (cut recipe in half)
4 sq. melted unsweetened chocolate
4 Tbs butter
2 2/3 cup powdered sugar
½ tsp salt
1 tsp vanilla
6 ½ Tbs milk
Mix well. Should be of spreading consistency.
Makes about 6 - 7 dozen
