I was just looking through Cookies by Bess and came along the Salted Peanut Cookies recipe. It’s funny to me that I can look at this cookie book over and over and still find a recipe I haven’t noticed before. Not sure why I missed this one before because I love cookies with corn flakes and quick oats! This recipe has both!

I’m rating this recipe 1-star for cookie difficulty. It is really an easy, mix it up, drop spoonfuls, and bake recipe. The finished cookies are so good, you’ll make this recipe again and again!

I got started by pulling all my ingredients together. I had some Spanish Peanuts left from making the Peanut Squares recipe, so I used them for the salted peanuts. Spanish peanuts have a great flavor and are definitely salty, so I thought they would work great! Which they did, but next time I’ll use regular salted peanuts because I’m assuming these are what Grandma Bess was really calling for.

The recipe calls for sifted and packed brown sugar.  I’ve seen this a couple times before in other Cookies by Bess recipes.  I’m not sure why it calls for sifted brown sugar, but I followed Grandma’s instruction  🙂

Once all the peanuts, corn flakes, and quick oats were all mixed together I had a super chunky cookie dough…that tasted great! YUMMY!

It was easy to drop spoonfuls of dough on the greased cookie sheet. I used a heaping teaspoonful. The dough was a little dry when I got to the last few spoonfuls, but it didn’t make any difference.

I baked the cookies for 12 minutes to ensure they were fully done. The baked cookie browned a little and when cooled down became nice and crunchy.

Check out this cookie! Look at all that texture! The peanuts, corn flakes, and quick oats together provide a salty, crunchy, and chewy bite.

I’m not sorry I can’t stop eating these cookies! I love the salt, the crunch and the texture and complete package of these cookies!

Salted Peanut Cookies are a perfect cookie to make when you don’t have a lot of time but want a cookie that will WOW your family and guests.  They are easy to make and kids of all ages will love them!

Salted Peanut Cookies

Ingredients

1 cup butter
1 cup brown sugar, sifted and packed
1 egg
1 cup chopped salted peanuts
1 ¼ cups flour
2 ½ tsp baking powder
1 ½ cups corn flakes
1 ½ cups quick oats

Instructions

Cream butter and sugar until light and fluffy. Add egg and mix well. Add corn flakes and oats and miz well. Add sifted flour and baking powder and mix well. Add peanuts. Drop by spoonfuls on greased cookie sheets and bake at 375 degrees for about 11 or 12 minutes.
